Welcome to the Kati Keksi monthly newsletter, bringing together the latest content from the Kati Keksi website as well as highlights from social media including Facebook and Instagram. Hey there! I tell you what, writing newsletters at the last minute really comes back to bite you in the ass when you're sick at the end of the month. I've been feeling a bit off since before my holiday (more on that trip in a moment), just a low level congestion. But after a brief outing on Saturday night I woke up Sunday morning with a full-blown cold. So much for my flu vaccination - next week then.π€πΌ So it's now day four (I wrote this Wednesday night) and I am still pretty wrecked. I'm getting things done here and there, like the new products reel I just put up on Instagram. Being a blogger / influencer means you work for yourself and you're your own boss. But it also means there's no cover when you're sick, no one to pick up the slack. So I've been cruising with the bare minimum the last few days and that's why this newsletter is extra late. Enjoy! Finally, a holiday Last month my family, along with my parents, visited the Gold Coast. It's the first proper holiday we've had in a long time and it was very much overdue and appreciated. We took it easy and spent our days around Surfers Paradise, venturing out for just one or two activities per day. With my parents available to babysit, my husband and I had a few dinners out on own - including our first ever teppanyaki experience! Turns out there are about six or seven teppanyaki restaurants in the Gold Coast and many of them have gluten free menus and no gluten on the grill. π Food highlights for me were Fricken, a fried chicken place down in Broadbeach and Urban Fish Market which funnily enough is literally across the road. During the day we visited HOTA - Home of the Arts, a gallery / museum space accessible by bus or ferry. That was really nice, just to take in a few exhibitions. We wrapped up with a coffee and GF cake on the top floor restaurant. I think the highlight for my kid though was the AQUADUCK tour. A giant amphibious vehicle that does a one hour tour on the streets and waterways of the Gold Coast. We heard squeals whenever one went past on the tour so we booked that as a surprise on our last day. βΊοΈ And of course Like with any holiday a few things went wrong, the last was our flight home being delayed two hours. It already wasn't a great flight time, 5.30pm, travelling right over dinner time. So being delayed until 7pm meant I was making do, trying to figure out more snacks to keep myself going. In the end it was jam and peanut butter on corn thins. Oh and of course Carman's / Sam's protein bars from my backpack. I think in the future I'll keep an instant noodle pot in my bag. It makes a big difference to have something hot to eat at the end of a long day. Oh and I had a ready meal in the freezer at home waiting for me. I knew it would be a rough day, so I grabbed the Coco and Lucas butter chicken from Coles. Cannot even remember what it was like, but it was appreciated! On the horizon I was going to mention what is coming up but honestly I'm not too sure. I've got a few article / recipe idea for the next few months but not a lot beyond that. There was talk of another trip with my parents but I'm not too sure when / where. Soon though my husband has an overseas work trip and my parents are going travelling. So one thing in my future is certain - more time being mum. π Kati x OH! And thank you to the thousands of people who used my two ANZAC biscuit recipes last month for ANZAC day.
